Preheat
oven to 350 degrees F (175 degrees C).

Dip
chicken breasts in the eggs. Place the bread crumbs in a
shallow bowl; coat the chicken with the bread crumbs.

In
large skillet, heat the oil until moderately hot. Place the
chicken in the frying pan and brown lightly on both sides.
Remove from pan and place in a baking dish.

Top
each breast with a slice of mozzarella cheese. In a
saucepan, mix together the heavy cream, Parmesan cheese, parsley,
salt, and pepper.

Cook
until the mixture is hot and has thickened. Pour over
chicken and bake for 25 minutes or until cheese is melted and
light golden.

| NOTE:
This is great served over pasta. Sometimes I get the whole
dish together and put it aside in the refrigerator for a day or
two. Then, 30 minute before I'm ready to serve it, I bate
it. Sometimes I'll sprinkle a little nutmeg or paprika on
top for a little different taste. |
