Very Ritzy Italian Chicken

" It's so fancy you won't believe how easy it is!  The best part of this one is that you can make it (and clean it up!) ahead of time.  that leaves plenty of time to enjoy all the applause!  And no, it's not low in calories, but it sure is right for that special time or special person. "
  • 3 Whole Chicken Breasts
  • 2 eggs, slightly beaten
  • 1 cup seasoned bread crumbs
  • 3 tablespoons olive oil
  • 6 slices mozzarella cheese
  • 1 pint heavy cream
  • 1 cup grated Parmesan Cheese
  • 2 tablespoons chopped fresh parsley
  • Salt and Pepper to taste

Preheat oven to 350 degrees F (175 degrees C).


Dip chicken breasts in the eggs.  Place the bread crumbs in a shallow bowl; coat the chicken with the bread crumbs.


In large skillet, heat the oil until moderately hot.  Place the chicken in the frying pan and brown lightly on both sides.  Remove from pan and place in a baking dish.


Top each breast with a slice of mozzarella cheese.  In a saucepan, mix together the heavy cream, Parmesan cheese, parsley, salt, and pepper.


Cook until the mixture is hot and has thickened.  Pour over chicken and bake for 25 minutes or until cheese is melted and light golden.

 NOTE:  This is great served over pasta.  Sometimes I get the whole dish together and put it aside in the refrigerator for a day or two.  Then, 30 minute before I'm ready to serve it, I bate it.  Sometimes I'll sprinkle a little nutmeg or paprika on top for a little different taste.
