Chicken Fajitas

" This so good on the BBQ!  Just marinate the chicken for an hour, and BBQ.  Great with flour tortillas, guacamole and salsa. "
 
Ingredients
  • 8 skinless, boneless chicken breasts - cut into bite size strips
  • 1/2 Cup Vegetable Oil
  • 3 Tablespoons white wine vinegar
  • 2 Tablespoons fresh lime juice
  • 1 small onion, finely chopped
  • 2 garlic cloves, crushed through a press
  • 1 teaspoon Louisiana hot sauce (or hot pepper sauce)
  • 1/2 teaspoon garlic salt
  • 1/4 teaspoon freshly ground pepper
  • 16 Flour Tortillas (warmed)
  • Guacamole and Salsa (check appetizers for recipes)
   
Directions

In large bowl, combine, oil, vinegar, lime juice, onion, garlic, pepper sauce, salt, and pepper.  Add chicken and marinate at least 1 hour at room temperature or overnight in the refrigerator.

Light charcoal grill or preheat broiler.  Remove chicken from marinade; reserve marinade.  Grill over medium-hot coals or broil, turning and basting with marinade several times, for 10 minutes, until chicken is opaque throughout but still juicy.

To serve, spread tortillas with salsa, guacamole or sour cream.  Add chicken and top with lettuce if desired.
