Preheat
oven to 350 degrees F.

Add
the eggs, sugar, butter/margarine, vanilla and grated lemon rind and blend well.

Stir
together the flour, baking powder and salt. Add to the
creamed mixture and blend well. Divide the dough in half,
wrap each half snugly in plastic and refrigerate for several hours
or until firm enough to roll out.

Dust
the work surface and rolling pin with flour. Roll out half
the dough at a time to 1/8" thick. Cut with a large
cookie cutter. Gather up the excess dough and save it for
re-rolling. With a spatula, transfer the cookies to the
cookie sheet.

Brush
each cookie with egg white and sprinkle with sugar.

Bake
for 8 minutes, until golden. Let the cookies cool slightly
on the cookie sheet and then transfer to wire racks to finish
cooling.
