" This is my favorite cookie recipe.  Everybody ALWAYS asks me for this recipe, they are a big hit.  A word of warning, double this recipe because you won't get any for yourself! "
  • 1/2 cup butter or margarine
  • 3/4 cup smooth peanut butter
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1 egg
  • 1/2 teaspoon vanilla
  • 1-1/4 cups flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • Small bowl of sugar

Preheat oven to 350 degrees F. Grease cookies sheets.

Blend the butter and peanut butter.

Add the sugar and brown sugar and blend well.

Add the egg and vanilla and blend well.

Stir together the flour, baking soda and salt.  Add to the peanut butter mixture slowly and blend well.

Roll mixture into balls and roll into sugar.  Place on cookie sheets leaving 1-1/2 " between drops.  Flatten each cookie with a fork (dipped in flour if necessary), pressing it into the cookie in both directions to form criss-cross pattern.

Bake for 15 minutes or longer until they are slightly brown and just beginning to get firm to the touch.  Allow cookies to cool on cookie sheet for few minutes and then transfer to wire racks to finish cooling.

NOTE:  I use chocolate sprinkles or at Christmas time red and green sugar sprinkles to decorate.  Another variation is to add chocolate chips to them for a reese's affect.
