Orange

" I
like to make this cake around Easter and early spring,
but it's good any time of year! I use two good size oranges.
I hope you like it. "

| Ingredients |
1/2 cup butter or margarine, softened
1 1/2 cups sugar
3 eggs
1 T. grated orange rind (fresh)
2 cups all-purpose flour
1 T. baking powder
1/2 t. salt
1 cup orange juice (fresh squeezed)
Orange Frosting
1/2 cup butter
2 tsp. grated orange rind (fresh)
1/8 tsp.salt
1 egg yolk
4 cups powdered sugar
1/4 cup orange juice

Preheat oven to 350F. Cream butter and sugar well. Beat
in eggs 1 at a time. Add orange rind.

Combine flour, baking powder and salt in small bowl.

Add flour mixture to butter mixture in 3 parts alternately
with orange juice in 2 parts, beginning and ending with flour
mixture.

Mix well. Spread in 2 greased and floured, 9 inch
layer cake pans. Bake in oven for 20 to 25 minutes.

Frosting: Combine butter, orange rind, salt and egg yolk.
Beat till blended, add sugar alternately with orange juice.

Hint: Use an old
toothbrush to clean all the orange peel out
of the little holes in your grater. |
