Bittersweet Chocolate Pound Cake

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 1/2 cups water
  • 2 tablespoons instant coffee powder
  • 6 (1 ounce) squares unsweetened chocolate, chopped
  • 2 cups white sugar
  • 1 cup butter, softened
  • 1 teaspoon vanilla extract
  • 3 eggs
  • 3 tablespoons butter
  • 2 (1 ounce) squares unsweetened chocolate, chopped
  • 1 1/2 cups confectioners' sugar
  • 2 tablespoons water
  • 1 teaspoon vanilla extract

Preheat oven to 325 degrees F (165 degrees C). Grease and flour a 10 inch Bundt pan. Sift together the flour, baking powder and baking soda. Set aside.


In a small saucepan combine water and coffee powder. Bring to a boil and remove from heat. Stir in 6 ounces chopped chocolate until smooth. Set aside.


In a large bowl, cream together 1 cup butter and 2 cups sugar until light and fluffy. Beat in the eggs one at a time, then stir in 1 teaspoon vanilla. Beat in the flour mixture alternately with the melted chocolate mixture. Pour batter into prepared 10 inch Bundt pan.


Bake in the preheated oven for 50 to 60 minutes, or until a toothpick inserted into the center of the cake comes out clean. Cool in pan on wire rack for 30 minutes. Invert onto wire rack to cool completely. Drizzle with Chocolate Glaze.


To make the Chocolate Glaze: In a small saucepan, melt 3 tablespoons butter with 2 ounces chopped chocolate over low heat. Stir constantly until smooth. Remove from heat. Stir in powdered sugar alternately with water until of desired consistency. Stir in 1 teaspoon vanilla extract.
