1 package Jiffy corn muffin mix
1 egg (washed, shell crushed fine if desired)
1/3 cup apple juice
1 apple, seeded and diced
1/3 cup frozen peas
1/3 cup frozen corn
1 Tablespoon pine nuts
1 Tablespoon candied orange peel, diced
1 Tablespoon crystallized ginger, diced

Mix all ingredients and bake according to package directions. Makes 12 muffins, not 6 as package states, because of all the goodies in there. Leftover muffins freeze nicely.
