Blueberry-Millet Seed Muffins   
  • 1/4 c. hulled millet
  • 1 c. milk
  • 2 c. whole wheat flour
  • 3 tsp baking powder
  • 1/2 tsp nutmeg
  • Grated rind of 1 lemon
  • 1 egg, lightly beaten
  • 3 tbl. butter, melted and cooled
  • 1 c. frozen blueberries
  • 3 tbl. Petamine
  • Grease muffin tins lightly . Soak the millet in the milk for 10 minutes. Combine dry ingredients and lemon rind. Add the millet mixture egg and melted butter. Stir in blueberries carefully. Bake at 400 degrees for 25 minutes. Cool.

    Note:  I omitted 1/2 c. sugar & 1/2 tsp salt from original recipe.
