Banana Nut Muffins

2 cups whole wheat flour
2/3 cup sugar
1 tsp baking powder
1 tsp baking soda
1/4 cup cheddar cheese
3/4 cup chopped bananas
1/2 cup nuts, finely chopped
2 eggs with shell
1/2 cup vegetable oil


Mix the dry ingredients in a bowl. Wash the eggs thoroughly, blend including the shell, add the oil, and mix well. Add the eggs and oil to the dry ingredients.

Spoon into greased muffin cups. Bake for 20 to 25 minutes in a 375 degree oven, or until a toothpick inserted in the center comes out clean.

Note:  I omitted 1/4 tsp salt from original recipe.
