- this is a double recipe, so split it in half and save for next batch - 2 cups of this mix is plenty for one 9 x 13 pan batch.
Dry Flour Mix:1 c. whole wheat flour1 c. corn meal1 c. buckwheat flour1/2 c. Bulgar wheat cereal1/2 c. flax seedFilling ideas:Cooked sweet potatoes, squashSlightly steamed Kale, Mustard Greens, Spinach, Dandelion greens etcSlightly steamed broccoli, corn, cauliflower etc.Soaked and cooked various beans, lentils, dried peas, etcChopped (food processor or blender) carrots, radish, tomatoes, etcAny combination of these ingredients will work. I usually prepare the cooked ones in advance and store them in vacuum sealed bags in the freezer. It makes preparing the bread a lot less time consuming to have ingredients stored ahead.To 2 cups beans/veggies mix add 2 cups of dry flour mix, add 3 eggs(some put egg shells in as well)and just enough water to keep the mix smooth, about 1/4 - 1/2 cup
Spray pan with cooking spray or oil, bake in 350 oven for about 40 minutesI take mine out while it is still slightly moist, not totally dry
Cut in squares and keep a weeks worth in fridge, freeze the rest.
