this is a double recipe, so split
it in half and save for next
batch - 2 cups of this mix is plenty for one 9 x 13 pan batch.
Dry Flour Mix:
1 c. whole wheat flour
1 c. corn meal
1 c. buckwheat flour
1/2 c. Bulgar wheat cereal
1/2 c. flax seed
Filling ideas:
Cooked sweet potatoes, squash
Slightly steamed Kale, Mustard
Greens, Spinach, Dandelion greens etc
Slightly steamed broccoli, corn,
cauliflower etc.
Soaked and cooked various beans,
lentils, dried peas, etc
Chopped (food processor or
blender) carrots, radish, tomatoes, etc
Any combination of these
ingredients will work. I usually prepare the
cooked ones in advance and store them in vacuum sealed bags in the
freezer. It makes
preparing the bread a lot less time consuming to have ingredients
stored ahead.
To 2 cups beans/veggies mix
add 2 cups of dry flour mix, add 3 eggs
(some put egg shells in as well)
and just enough water to keep the
mix smooth, about 1/4 - 1/2 cup
Spray pan with cooking spray or
oil, bake in 350 oven for about 40 minutes
I take mine out while it is still
slightly moist, not totally dry
Cut in squares and keep a weeks
worth in fridge, freeze the rest.
